Keto-friendly breakfast recipe. These muffins are made in oven and they will keep fresh for several days in the refrigerator.
Ingredients:
12 large eggs
½ cup of diced bell peppers
½ cup of diced onions
½ cup of diced mushrooms
1 cup of diced ham
½ cup of shredded cheese
¼ teaspoon of garlic powder
¼ teaspoon of onion powder
¼ teaspoon of black pepper
1 tablespoon of olive oil
Instructions:
1. Preheat oven to 350°F.
2. Grease a muffin tin with olive oil.
3. In a medium bowl, whisk together eggs, garlic powder, onion powder, and black pepper.
4. Add bell peppers, onions, mushrooms, ham, and cheese. Mix to combine.
5. Pour egg mixture into muffin tin, filling each cup about ¾ full.
6. Bake for 35-40 minutes, or until eggs are cooked through.
7. Let cool before serving. Enjoy!
